Taking That Extra Step On a Cold Day- The Yankee Elvis

Isn't it always the way that your kids want a peanut butter and jelly sandwich, but you insist they have a hot lunch?

This will help, and make sure you make one for yourself!

The Yankee Elvis
(makes 2 sandwiches)

4 slices of bread
Soft-spread butter/margarine
peanut butter
jelly
1 banana

Spread peanut butter and jelly between two slices of bread. Slice 1/2 banana per sandwich and layer. Unlike a standard grilled sandwich, you will want to complete the filling before spreading on the butter/margarine on the outside of the bread.

Grill on medium heat until light brown and crisp on one side, then flip and repeat. Try not to smoosh the sandwich, as peanut butter likes to liquefy quite quickly and will cause a stress on your frying pan. Also, be careful not to singe, as this sandwich isn't as forgiving as a grilled cheese or Reuben. A bit of burn can really throw off your flavors.
